Lately, I have been skimming Pinterest in hopes of finding cute Holiday themed foods to make for dinner and I came across the cutest idea, Stuffed Jack O’Lantern Peppers! I decided to give them a go and they turned out so cute and incredibly delicious! I had a hard time eating them at first because I was so in love with how cute they looked! I thought I would share the recipe with you all because they were just too cool to make and not share!
Since I have spent the last year and a half making dinners for Chris and I, I have started to get more confident with my cooking abilities and more experimental with recipes, so I decided to do my own spin on this one, rather than fully following the Pinterest recipe I found originally.
With that being said, here is my rendition of this festive meal!
- 4 large Orange Bell Peppers
- 1 Rotisserie Chicken (you can find these near the deli!)
- 1 box of Mexican Rice
- 1 can of Corn
- 1 can of Black Beans
- Onion Powder
- Taco Seasoning
- Garlic Powder
Total Prep & Cook Time: About 35 minutes (This was a super quick and easy meal!)
First, I headed to the grocery store and picked up a Rotisserie Chicken, 4 Orange Bell Peppers, and a box of Mexican Rice. Luckily, I already had the rest of the ingredients at home!
Once you’re ready to make the meal, start cooking your rice! This step takes the longest, so just read the instructions on the box and get that going before you move onto the next step.
After you have started your rice, bring a large pot of water to boil. This will be what you use to cook your peppers in.
Next, I rinsed and cleaned out the bell peppers; making sure that I removed all the seeds from the inside! *Remember, when cutting the tops off of the peppers, cut them like you would a regular pumpkin! (Don’t chop the whole top off like I did on my first one!)
Then, carve your peppers! Make sure that you don’t carve the facial features too big though, or else the food will fall out when you stuff them! Once you’re done with this step, boil your peppers for about 5 minutes, just until they have softened up. Then, remove them from the water and let them cool on your cutting board.
After that, start picking all the chicken off the bones and shred the chicken in a large pan. (I leave out the skin from the chicken, but that’s your choice!)
Once the chicken is shredded in your pan, turn the heat on medium/low, add about a 1/2 cup of water, and season it with your Taco Seasoning, Cumin, Onion Powder, and Garlic Powder. I’m not going to say the exact amount of seasoning to use because I always just add seasoning until I am satisfied with the taste!
Once you stir that up, add your can of black beans and can of corn, and mix it all up! I chose to only add about 3/4 of the black beans and corn, but again, that’s your choice!
By now you’re rice should be done and you should be ready to stuff your peppers! You can either mix your rice in with your chicken mixture, or serve it on the side! I chose to mix about half the rice in with the chicken and then serve the remainder on the side.
Just take a large spoon, scoop your chicken mixture into the peppers and viola! You now have adorable looking, Stuffed Jack O’Lantern Peppers! Enjoy! (:
